Pretty in Pink Glazed Donuts

Ingredients

For the donuts

  • 2 3/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 eggs
  • 1 cup milk
  • 1/4 cup unsalted butter melted
  • 1 tsp vanilla extract
  • oil for frying vegetable or canola oil

For the pink glaze

  • 2 cups powdered sugar
  • 4 tbsp milk
  • 1 tsp vanilla extract
  • pink food coloring gel or liquid
  • sprinkles

Instructions

How to make the donuts

  • In a large bowl, whisk together the flour, sugar, baking powder, and salt. In a separate bowl, beat the eggs. Then add the milk, melted butter, and vanilla extract. Mix well.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; the batter should be lumpy. Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hours (or overnight) to allow it to firm up.
  • After chilling, lightly flour a clean surface and roll out the dough to about 1/2 inch thickness. Use a donut cutter or two different sized round cookie cutters (one larger an done smaller) to cut out the donut shapes. Remove the excess dough and save it for re-rolling.
  • Place the cut-out donuts on a baking sheet lined with parchment paper, leaving some space between each donut. Gather the excess dough. re-roll it, and cut out more donuts until you have used up all the dough.
  • In a large, deep pot, heat the oil to about 350 F (175 C). Use a candy thermometer to monitor the temperature. Carefully drop a few donuts into the hot oil, but do not overcrowd the pot. Fry for about 1-2 minutes on each side or until golden brown.
  • Use a slotted spoon or tongs to remove the donuts from the oil and transfer them to a wire rack or paper towels to drain excess oil. Allow the donuts to cool completely before glazing.

How to make the pink glaze

  • In a medium-sized bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth. Add a few drops of pink food coloring to achieve the desired shade of pink. Mix well until the color is evenly distributed.
  • Dip each cooled donut into the glaze, allowing any excess glaze to drip off. You can also spread the glaze onto the donuts using a spoon or offset spatula.
  • Place the glazed donuts on a wire rack to allow the glaze to set. If desired, you can add sprinkles or other decorations while the glaze is still wet. Once the glaze has hardened, the donuts are ready to be enjoyed!

Notes

Feel free to adjust the amount of food coloring to achieve your desired shade of pink.
